Sustainability is at the core of Bosq's foundation.
On a daily basis we strive to be as sustainable as possible from the food that we forage and source, to the plates that we serve on, to the tables that we dine on, to our strict no-waste food policy and composting and in-house water service, and an overall dining environment and experience.

We support local farmers and artisans and we strive to keep deep relationships with both.

All of our plates are made by a local potter, our tables are made by Aspen High School students, our walls are covered by beetle-kill pine, and our lights are all energy efficient.

Our tasting menu is focused on seasonality and where possible, local produce and meats.
